For screenshots on Mac I use and recommend Jing (http://www.jingproject.com). There also is a Windows version, but I’ve never used it.

Jing has a pretty good UI and lets you either grab images or record short videos while letting you select area of the screen that you want. It also lets you easily add arrows, boxes, text, and highlighting to your screenshots.

While there is an option to signup for a (free?) hosting account to easily post and share your screenshots/videos, I always just save to my desktop and email the .png or .swf to my clients.

The other recommendations are exactly what I use with Textmate being my text editor of choice.
